...driven the new MKVII Golf in either TSI or TDI variety? I've read that it handles well and is pretty good with both the 1.8T and the 2.0 TDI. I'm not asking about the GTI so answers for that won't help me much.

Yes, very recently. I bought a 5-door with the manual (I don't have it yet). I drove and am getting a TSI which I think is the strongest power-train in the class (170hp, 185lb-ft) and it feels as such. Though I didn't push the handling it is a very composed chassis. Steering is electrically assisted but connected enough for my tastes.
I'd recommend trying it to see if you like it.

The GTI is awesome!
I've only driven the TDI when it comes to your question. Heavy up-front, handles good. There are better handling cars though, I can imagine that 1.8T is the better driver (but no experience, we don't have that one over here) with somewhat less weight although it misses some torque of course.
But there's only one way to find out if it's a good match for your self: a trip to the dealer. Have fun!

We had four MkVII TDI+DSG as field test cars during the last year. I drove total of 12,000 km with them. They were good and silent cars but they didn't provoke any "buy me!" thoughts in me. The cars had plenty of minor issues (design features) that were bugging me.
I used my mobile phone to play music with Bluetooth connection. Two of the cars would start playing the music when the car was started but two needed me to manually start the playing. When the music was playing the cars's player raised the volume with one unit after each song (my Nokia phone was probably part of this problem but it works perfectly with all other devices except those four Golfs).
If start-and-stop system has shut down the engine and the driver's door is opened the car will ask to start the car manually. And if I push the start button the car will turn off totally (and of course loose the Bluetooth connection) and after that I can restart it.
If I have reverse gear engaged and I'll open the driver's door the car will pull the electric hand brake. I can still release the handbrake when the door is open and continue reversing. But surprisingly this safety function doesn't care about the other doors.
The cars had keyless entry that was pretty neat. But that also had one problem. Usually we had the "fold the mirrors when locked" function on. When you washed the car with a long brush the system didn't always remain in contact with the keys and the car panicked. Then it locked the doors which made the car fold the mirrors and made washing them more difficult. We had to keep the cars in tidy condition even during our messy winter so washing was quite common task.
The luggage space was really limited even though the Golf is getting quite big. My Golf MkII has a lot more.
Handling in normal situations was decent and I didn't investigate the handling further. The cars had flashy company decals so I didn't do any sporty driving.
